Traditional Easter Rolls

Ingredients for making traditional donuts

  • 3 medium eggs
  • 800 gr of plain flour
  • 150 gr grated coconut (if possible)
  • 80 ml orange juice
  • 100 ml of virgin olive oil
  • 10 cl of aguardiente (if we have anise also serves)
  • Zest of a lemon
  • 200 gr of sugar
  • 1 sachet of yeast
  • Baking agent for baking
  • Frying oil

Ingredients for preparing the syrup

  • 400 ml of water
  • 180 gr of sugar
  • Skin of an orange
  • Skin of a lemon
  • 8 pods of cardamom or a stick of cinnamon

How to Make Easter Donuts step by step

Then we started to get to work with the eggs. We put them in an ondo plate or a saucepan to beat. Beat the eggs a little and then add the orange juice with the oil, yeast and baking gasifier. Combine all the ingredients until they are bound with a beater or a few rods.

Then add to the prepared mixture the brandy or, failing that, we can incroporate the rum. We can also use anise in the case that we do not have aguardiente, but we will have a harder mass that will finally affect the result of the recipe. We also incorporate the lemon zest and mix everything well.

After adding all the ingredients add the sugar with the flour and the grated coconut. The mixture this time is more consistent, so the moment you can not move the mixture because of the flour, help yourself with a fork or handprinting. We knead well until obtaining a totally homogeneous mass, bright and elastic . Check that the dough does not stick too much to the work table, in this case we will need to incorporate a little more flour.

The next step will be to fry the donuts. For this we heat a lot of oil in a frying pan or use a fryer if we have it on hand. When the oil is very hot, shape the donuts the size we want (without passing because they will increase in size later). Once they are done, we remove them and incorporate them in a plate with absorbent paper to eliminate the rest of the excess oil .

For this we will follow some simple steps. Mix all the ingredients that I have left previously in the list for the syrup and stir well in a saucepan to boil for about 15 minutes.

Once the syrup is made we will remove it from the fire to let it cool a little and add the donuts we have in the saucepan in syrup. For a few seconds we will bathe the donuts well in the prepared sauce so that it takes all the possible flavor of the syrup and later we will take it out to a tray to present.
